SAUVIGNON BLANC 2016
ATARAXIA
Harvesting happens during the early hours of the morning.
Malolactic fermentation.
Stainless steel cuvaison on yeasts.
The berries harvested in this vintage, because of the great heat, were very small.
As a result, this vintage is characterized by a very concentrated nose.
It opens on mineral notes and then moves on towards white peaches, citrus fruit and lemon juice.
This fruit salad is hits the palate, followed by a wonderful acidity that incites a prolonged consumption.
A very balanced wine, persistent, fascinating.
